Cauliflower Pizza Crust with Basil Ricotta, Zucchini, & Onions



So if you are a Pinterest nut like myself, you may have seen some version of Cauliflower pizza crust pop up more than a few times. In my case, it had been showing up left and right, and jeez did it have me quite curious. Me and Aar have been doing a lot more healthy eating lately and I thought the idea of cauliflower being a full-on substitute for bread definitely sounded like a healthy option. So I went through my bookmarks, did some reading up on ingredients and specific preparation methods, and said: 'Hey...lets party!' Aaron, being a huge fan of cauliflower in general, was more than game. 
In my research I found that all the recipes were basically very similar takes on the same premise...and what a fab premise it is!...Replacing the idea of pizza crust/bread with something that's healthy & tasty, and can be flattened & molded, and it can bake up crispy enough to act as a crust. When you finely grate raw cauliflower, mix it with grated cheese and egg, it will bake up like flatbread. Fantastic! I read a ton of reviews and comments on a number of blogs and most peeps were totally satisfied with the outcome. You just have to keep in mind that there is no flour at all...so you can't go in expecting a spot on replica of traditional pizza crust. Though what you can expect is a super duper delicious and creative substitute for that over indulgent bread you may have been avoiding.
First let me say that we were so thrilled with the outcome that I know for certain that we'll be making this A LOT...and I look forward to all of the fab variations we'll concoct. There are many recipes out there...some of them like this one , where the crust is more of a tasty breadstick that you can dip in sauce...so without the toppings it stays much more crispy. But we were looking for a more straight up pizza experience. We loved the look and sound of this particular recipe and decided to use it as a starting point for ours. Knowing confidently what I like and don't like, I'm a big time tweaker of recipes when I need to be. As far as sauce goes, you can use your favorite jarred variety or I highly recommend our recipe for a simple tomato sauce...it takes all of two minutes! 
Ok, here come the details:


Makes 4 individual pizzas

The Cauliflower Crust:
2 eggs
2 cups shredded low fat mozzarella cheese
1 tablespoon grated parmesan cheese
2 cups grated cauliflower
1 tablespoon minced garlic
1/4 cup fresh chopped basil
salt & pepper to taste
1 teaspoon onion powder

Basil Ricotta:
1 cup low fat ricotta 
2 tablespoons fresh chopped basil
salt and pepper to taste
1/2 teaspoon garlic powder

*Simple Tomato Sauce:
1 cup chopped tomatoes ( I use Pomi brand and LOVE it)
2 teaspoons olive oil
2 teaspoons minced garlic
dash of balsamic vinegar
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon Italian herbs
dash of salt & pepper
dash of sugar (optional)

Additional Toppings:
 half of a large zucchini thinly sliced
 half of an onion thinly sliced
fresh chopped basil
.....or whatever toppings you like! 

Preheat oven to 450 degrees.

Line a cookie sheet with parchment paper, spray with non-stick spray.




First, really just look at this. This is going to make pizza crust! Too cool!
Ok, wash your cauliflower head well, and dry it well. 


 Preheat your oven to 450 degrees...and know that your crust will be entering the oven twice...first with no toppings, so that it gets crispy and firms up a bit on it's own...and then you'll pop it out, add all of your toppings, and send it back in so that the whole assembled magical pie bakes together. 
Ok, that said...next, using a cheese grater, grate 2 cups of raw cauliflower into a big bowl. Now, let me first say that this next option is totally optional, in fact, we did not read about it until after we finished ours...and we were thrilled with our outcome...so again, totally optional. Here's the thing...cauliflower is pretty moist, so when it bakes up it sorta steams in the oven and therefore it might not get as crispy as possible. So a lot of people recommended that you first dry your shredded cauliflower with cheese cloth...pretty much wring out all of the moisture before combining it with the other ingredients. Sounds like a great idea and we will try it next time. But like I said, we were thrilled with our outcome, and the crust gets pretty firm and crispy on it's first trip into the oven when it's not yet loaded with toppings.






In a large bowl, combine your grated (raw) cauliflower, basil, garlic, parmesan, onion powder, salt & pepper, mozzarella, and eggs. You can use your hands here!




 Divide into 4 equal amounts and press evenly onto a greased parchment paper lined cookie sheet (we sprayed our parchment with olive oil). We pressed ours into rectangles. Try your best to make them all an even thickness. Now, pop them in the oven and set your timer for about 15 minutes. Check them around 13 to see if they are browning. We ended up leaving ours in for about 17 mins. They looked nice and crisp and brown along the edges when we took them out. During this 17 or so minutes you'll be preparing the deeelish toppings! 



So, while they are in the oven, let's make that delicious basil ricotta! In a medium bowl, combine your ricotta, basil, garlic powder, salt & pepper. Mix well and set aside. I dare you to not take a taste of it! ;)  I grabbed a grape tomato, dipped it in...and then pretty much fell over with delight! And then I repeated that same process so that Aaron could do some delightful falling over as well!


*Ok, and now if you opted to make your own simple tomato sauce, which takes like 2 mins, grab a small sauce pan. Set to medium heat, Add your olive oil. Now add your garlic, and cook till fragrant, about a minute...don't let it get brown. Now add your crushed red pepper flakes and stir around a bit. Add your tomatoes, herbs, and balsamic vinegar. Stir. Add your salt, pepper and sugar. Remove from heat and set aside.


Now, let's top those pizza crusts!

They held their shape wonderfully! They kinda had the look of crispy omelettes I guess. Not so much actual pizza crust...but a delicious looking and smelling base for the yummy toppings! Which is exactly what we were hoping for here! A healthy, low calorie, low carb, super tasty, and nearly guilt free version of that glorious thing called PIZZA!

Spread about 1/4 cup of the tomato sauce on each pizza. Then layer on the thin sliced zucchini and onions, followed by two blops...yes blops...pretty sure that is the technical term...of our amazingly delish basil ricotta mixture. Press the blops down a bit to spread them. Sprinkle with a bit of grated parmesan cheese and return to the oven for about 8-10 mins. We want our ricotta to be warm and melted a bit. Top with a smidge more of the fresh basil!


Ummm...look at this! 
They were so so deelish! We really just kept looking over at each other after each bite, like wowzer! This was once just a head of cauliflower! We also agreed that we wouldn't leave out anything here. Every layer worked perfectly with the next. We absolutely loved the onions! Again, since the toppings were thick and the crust thin, we couldn't really pick the pizzas up to eat them that way. But we were more than happy to go knife and fork style...heck, it seemed like it gave us more time to savor the pizza.  And when eaten with a fork it gets you thinking about comparisons to other dishes. We both thought this was more delicious than lasagna or cannelloni. Sure, it is called a pizza...looks like a pizza...has the flavor of pizza...but it in the taste department it delivers MORE than many pizzas we've eaten! 

So if you are looking to try something new, something healthy, low carb, low cal...grab a head of cauliflower on the next shopping trip!

ps. This reheats fabulously. Aaron, simply popped one in the toaster oven for like 6 minutes and it was perfect...probably even better than the first time around. The textures and flavors had time to marry, and the re-toasting crisped it up really well.

I've been drooling over these pillow covers from Goods by Grinn for a while now. I follow them on Instagram and every time I see the pillows my heart flutters! I ADORE the gold polka dots! And the heart pillows in Gold, Pink, And Aqua! I seriously want them ALL! Geez Man!

Sweet Potato, Black Bean & Kale Quesadillas


Ok, I know that every time I share a recipe I rave about how deelish it is...but I've got a good reason for my "supper superlatives"...I can say that the recipes are great because I make sure to only share the great ones. If a dish we make is just really good then it doesn't make the cut for the blog. I don't care if it's a very photogenic dish...or it's got a catchy name...or whatever. I only want to share recipes that I know you guys will love to make and love to eat...simple as that. So, with that said...this recipe right here more than makes the cut. I'm not exaggerating in the least when I say that this one makes my mouth crazy happy! The combination of flavors is perfection! It's sweet, spicy, savory, and it's kicked up with some chipotle peppers in adobo sauce...Yowza! 
 And we really did have a great time preparing it. We worked production line style. This recipe yields a bunch! So if you don't have a big family then I suggest it for a dinner night with friends! Over here it's just the two of us...but every so often my brother Walt will traipse in all covered in grease and "workin'man grime"...and he often goes through a very long work day and completely forgets to feed himself. So on the night in question, his begrimed self entered the kitchen, we sat him down, and said "EAT"! 
And he flipped for the things...and we had plenty left over for lunch the following day. You could even freeze your extras. And oh yeah...these are vegetarian!  


What you'll need:

3 medium sweet potatoes, sliced about 1/2" thick.
¾ teaspoon salt, divided
2 teaspoons cumin
1 teaspoon chili powder
¼ teaspoon oregano
2 chipotle peppers in adobo sauce, minced
½ tablespoon olive oil
3 cloves garlic, minced
3 cups chopped kale
4 green onions, thinly sliced
1 can black beans, drained and rinsed
10 large whole wheat tortillas
2 cups freshly grated cheddar cheese


Let's cook!



First, add your sliced sweet potatoes to a large saucepan with just enough water to cover them. Add ½ teaspoon of the salt to the pot. Bring the water to a boil. Then, reduce the heat to medium and simmer for about 15 minutes, or until the potatoes are fork tender. Drain your potatoes and then add them to a large bowl. Using a potato masher, mash the potatoes. Add the remaining ¼ teaspoon salt, cumin, chili powder, oregano and chipotle peppers. Mix until well combined. You can peel the potatoes if you'd like, but we did not peel ours...and both of us remarked to each other that the potato skins were a big bonus...added a great layer of flavor.


Now, in a medium saute pan, heat your olive oil over medium heat. When hot, add your garlic, cook till fragrant. Now add in the kale and green onions. Cook for about 3 minutes, until the kale is bright green and tender. Add this mixture to the bowl with your mashed sweet potatoes. Now, add in the black beans and mix until well combined.


Using a spatula, spread about ½ cup of filling mixture on half of the tortilla. Sprinkle with ¼ cup of cheese. Fold your tortilla in half, covering the filling. Repeat with remaining tortillas.

Now,  heat up a large skillet over high heat. When hot, spray lightly with nonstick cooking spray. Place assembled quesadillas in the pan (two at a time) and cook 2-3 minutes on each side, until golden brown, cheese is melted, and the filling is hot.

Cut in half and serve with hot sauce, sour cream, and fresh cilantro!

Let's talk about an amaaazing mail week, and ephemera gone bad



 We've all had amazing mail days, right? You hear that familiar thud on the other side the front door, out the window you see the postman receding, and sitting there on the mat is either a box or envelope that you've been anticipating. Inside is the super cute art print you ordered, or the vintage apron you won on ebay, or the contents of that swap you're in, or a totally random out of the blue gift from a blogland friend. Maybe I'm a cheap date...but a good mail day is probably close to the top of my favorite things list.
 Well, this past week I was lucky enough to have a few of those days! Holy Crow-ly man! It was like my Birthday week or something! First, this guy arrived!! Eeee! Look at him! And that tag! The tag is a riot! "Tremendous Easter Purchase". For once in my life I cannot find any exaggeration in that advertising statement.


Ok, the next arrival was this incredibly cute mini vintage toy piano! Oh em gee! And it's even got a bunny on the side! It was sent to me by the sweetest gal, a long time blog reader. She emailed to tell me that she had something that needed to come live with me! Oh my gosh! Is that the sweetest thing ever?! So so kind! Aaron and I adore it and it is already living in a special place among our treasures! As you may know I collect vintage toy pianos, and have them on display all throughout our home...but this happens to be my first with illustrations!! LOVE it!!



 Ummmm I just about DIED when this guy showed up at my door! Not even in a box...he just strolled up...ok, lying...but...he was a TOTAL Surprise! Like had no idea! Now, about his perfection...first...he's turquoise AND pink! My first two toned vintage bunny! And those eyes are huuuge! 
He was a gift from my sweet and ohhh so fabulous friend Kimberlee Edgar! She said she knew he had to come live with me! Ohh my gosh this guy is the greatest! And speaking of greatest...if you do not know of Kimberlee, you must visit her blog! She lives in them most incredibly fab world! A world full of dark curiosities, antique oddities, with a bit of Louis Vuitton thrown it! I kid you not! 


So it seems like my week couldn't possibly get better, right?...wrong! I received a huuuuge box all the way from Cali, from our sweet and mega talented friend Pam Garrison. When I opened this box I totally burst into tears. Pam had sent us the most beautiful vintage Christmas ornaments and so many other lovely lovely things...knowing that we had lost all of our Christmas decor.
I'm just floored. truly. What an extremely kind and generous gesture. These ornaments will hang happily and proudly on our new tree!


Pam also included this darling tin featuring The Three Bears! It is so so sweet! 


I had it in my possession for no longer than 10 mins, and it was already filled with some of my favorite vintage plastic bits.  :) 


Pam allllso sent along some of her AMAZING stamps! Which are hand drawn by the way! I had been dying to play with them for some time. They are so so cool! Here are two little embellishments I made using her stamps, embossing ink, and powder (heat set) and Heidi Swapp Color Shine! ...oh, and a sharpie! Aren't they so fun?!


And these arrows!! Ahh! LOVE them! Same technique...using (charcoal) Maya Mist. 


Annnd the fun didn't stop there! I was on a role! I used one of Pam's flower doodle stamps on Ranger Shrink Plastic! Eeee! Look at that adorable teeny tiny embellishment! So fun right?! Can't wait to do some more!


And now, If you have been wanting to use your Instagram photos in your Art Journals or scrapbook layouts or collages...then holy crow, have I got the link for you! You must must check out Persnickety Prints! I was able to choose as many of my Instagram photos as I liked, upload them very easily to their site and choose 3 different size/styles. 3 x 3, 2 x 2 centered on a 3 x 3 print, annnd their new polaroid style 3 x 3! Oh, and there are a few finishes to choose from as well. The prints arrived in like 3 days!! I ADORE them! And will be ordering more very soon! I paid about .45 each being that I ordered more than 15 of them in each style. Totally worth it! 




Ok, and here is where we talk about ephemera gone bad! ha! So...one of my fave things ever is gathering up my most loved papers, images, collage sheets, old books, and vintage photos...and cutting things out so they can be sorted and organized in such a way that they are easy to sift through when sitting down to make art! 
 I took a bunch of time the other day to get all of these things ready for some projects this coming week. We had made some copies of pages from favorite vintage children's books. We love the fonts and the yellowed pages. The words and phrases serve as perfect clip art for collages, art journal pages, and really any number of artful projects.


Ha! So I was cutting out some words and when I looked down this is what I found!! I seriously laughed out loud! Aaron heard me from the other room, so I then Instagrammed this...and then shared it on facebook. I then yelled into the living room, telling Aaron to have a look at my fb. Yeah, this could be seen as fun, funny, or lazy...or a combo of all three. Don't judge! ;)


And of course, it then went here. I was on a roll! Cracking myself up! I blame the coffee and the chai chaser! ha! 


So as it progressed I would just yell out to Aaron, "yep...I put something on facebook" ha!! (do you get dorkier? I think not) And I'm pretty sure I gave the disclaimer: "I'm very limited here."  ha!  I mean, these books were about a duck and an otter at a party! ha! Ohhh and I also got a kick out of the fact that The Walking Dead's Instagram was liking them! Yeah, as I said, I'm a cheap date people. It really doesn't take much to thrill me! ha!

Anyways, yep... Lots of pics here I know! I had to share the eye candy...this tiny weekend wrap-up of good mail and studio hijinks.

Friday Favorites


So totally in love with this dress! See that pretty pattern?...well if you look close you can see that it's actually a repeat of ballon animals!! So this little number has it all...cute pattern, color, and cut. Love how it's sorta vintage apron-ish.


Love love love these golden marbled Easter Eggs! Mixing pastel tones with gold is a look that I just can't get enough of. Most of my fave pieces of jewelry fit into this theme and I think I once described my taste in jewelry as "gilded Easter eggs". Well, these little beauties couldn't possibly capture that aesthetic any better. And guess what...you can make some for yourself! Find the tutorial here.


Ummmmm, this Bunny Butt cake just kills me. I think Easter is the perfect holiday for a fun and funny theme cake. Overall, as far as fun color, and accessories, and little collectible mementos, and bits of decor and ephemeral goodness...Easter has got to be at the top of the holiday list. The only holiday where you can get away with a cake like this...and I LOVE it!


Did your heart just melt? Because mine certainly did. Oh. My. Gosh. I just can't eeeeven! And as if the subject matter wasn't enough, the time and place of this photo make it all the more magical. This newly-born lamb snuggling up to a sleeping boy was snapped in England, in March of 1940.


Ok, so you know that I am sucker for anything old timey general store-esque. This twine and scissor set is perfection to me! It so so so needs to live in our studio! We wrap all of orders with bakery twine and classic brown twine is a go to for brown paper packages. Don't you just love beautiful objects that you can also put to daily use in your work?

Healthy Baked Granola Bars or Raw Granola Balls




Hey friends! And heyyy new friends! Just wanted to take a minute to say hello hello to my newest blog readers! I'm so so happy to have you and thrilled to be connected!  

So today I have a really yummy and easy healthy recipe for you. Yeah, we are on a kick over here. We love to cook and bake and eat! Ha! Aaron and I cook together daily and we've been doing a lot of clean eating recently. And by that I just mean healthy. Being more aware of what we are putting in our mouths / bodies. Nothing crazy. Nothing too strict. We have been eating some of the most deelish foods ever. Easy, fun to prepare, and made with fresh ingredients. The vegetable cutting board is working overtime...and we never feel like we've had cement transfused into our bloodstreams after dinner.

But you know I've been all about baking cupcakes, cookies, cakes...and all that great stuff...still am...but we are keeping an eye on ingredients, as well as how often we go wild. ;)

So for today I want to share these yummy homemade granola bars with you! Sometimes if you grab granola bars in the store you'll see that they really aren't too far from crazy candy bars when you read the ingredients. Well making them from scratch will let you rest assured because you control exactly what goes into them. They can be super delish without all the sugar and oils and stuff.
 It's nice to have treats that are healthy, a great source of energy in your day, an excellent booster prior to a workout. And your kids will love them and you'll love that your kids are eating them! Annnd you can change them up every time you make them with little additions and extras! Like cinnamon, or almond extract...or change up your nuts...switch to dark chocolate...go with almond or cashew butter...some coconut flakes, dried fruit...the possibilities are endless! 


Okie Doke...so here is what you'll need! 

3 cups rolled oats
2 tablespoons flaxseed
1/2 cup unsalted walnuts or almonds, or peanuts, chopped
1 cup natural peanut butter, warmed up
1/2 cup honey 
1 mashed ripe banana
1/4 teaspoon vanilla 
1/4 cup carob chips or dark chocolate chips

other great ideas for add ins:
coconut flakes
dried fruit
raisins

Preheat over to 350.

In a large bowl, combine your oats, flaxseed and nuts. Add your honey,  and mix well. Now add your warmed up peanut butter, banana, and vanilla. Mix until moistened.  Now, fold in your carob or chocolate chips or whatever add ins you'd like! You could add a bit more honey and/or peanutbutter if you think your mixture is too dry. It depends on your add ins. Try a tablespoon at a time.
Now, press your mixture into a greased (non-stick spray) 9 x 13 baking dish, and bake for about 25 mins. Edges will be a light golden brown. 
Cool for about 5 mins before scoring your bars then let cool another 10 or so before cutting, to give them time to set up a bit. 
Cut into squares and store between layers of waxed paper.  These bars have a fantastic texture. Crisp edges with a moist, chewy, sweet center. I really think the banana makes all the difference!



*And for a Raw (no bake) option... you can roll this dough into balls and pop them in the fridge for about an hour. They are fantastic that way as well! We made them both ways!

Incredibly Easy, Delicious & Healthy Penne Pesto


I have to admit that I am just not a Corned Beef & Cabbage type of gal. Never was. Both of my parents love it, and I'm pretty sure my brothers do too. Not sure about my sister. My Mom uses the same recipe that was handed down by her Nana's parents, straight from Ireland. I remember nearly cringing at the taste...the brine I guess. I always just ate the Irish Soda Bread and the potatoes. : /   

So on this St. Patty's Day while many were enjoying more traditional dishes I at least got the color right. I had some Basil that I wanted to use up and a half bag of whole wheat penne. I didn't have a full 2 cups of basil so I went half basil, half spinach. Also, I didn't have many pignoli (pine nuts) left...so I went half pignoli, half almonds. And while warming my pesto...just before tossing it with my pasta...I whisked in some plain greek yogurt for some creaminess. Ohhh my! It turned out fantastic! Seriously delicious! Totally on a whim...one of those dig around the fridge and cabinets type of meals...and yet, a keeper of a recipe! If you'd like to give it a try here it is:

You will need: 

3 garlic cloves 
1/4 cup pine nuts & slivered almonds mixed
1 cup fresh basil leaves
1 cup fresh spinach leaves
1/2 cup extra virgin olive oil
1/2 cup good quality grated Parmesan cheese
Salt and pepper to taste
8 oz of whole wheat penne
1/4 cup plain greek yogurt

First, get your pasta going. Your pesto will be ready before your pasta is ready! It is that fast and easy!


Now, In your food processor or blender, combine the basil, spinach, garlic, and nuts. Pulse until coarsely chopped. Next, add 1/2 of the oil and process until fully incorporated and smooth. Now add the rest of the oil and cheese. Pulse again till smooth.

Now, In a pan or pot large enough to hold everything ( I used the same pot I had boiled my pasta in ) Warm your pesto over low heat for about a minute or so, now whisk in your yogurt. Season with salt and pepper, and toss in your penne!  That's it!

Serve topped with a bit more of your grated cheese!

Surrounded by sweet supplies



You know that I love supplies...all kinds...vintage, new, bits, bobs...and I'm sure many of you can identify and have your own issues with hoarding craft supplies. Caches of vintage buttons, vast reams of scrapbooking papers, obsessively loved vintage wallpaper scraps, boxes of old photos, about a million paints...most with about two drops left in the bottle, multitudinous mediums with wide ranging capabilities...whew!...you know who you are! 
 We love to surround our selves with these things. The stuff that makes the magic happen. Some of my very favorite art journal pages happened because of my hoards...my piles of happy colored trims, papers, stickers, tapes. The supplies dictated the outcome of the art. I am normally not one of those types that shop specifically for a project. Well sometimes I do...and if you held a glue gun to my head I guess you could force me to. 
 For the way I work I just find it so so natural, and necessary to have piles, and bags, and bowls, and bins and boxes of all my favorite supplies around. I like grabbing and placing and trying...stumbling upon happy accidents and apropos afterthoughts.  I believe that if you LOVE the supply, buy it! It will find it's ay into the perfect project at the perfect moment! 





So, that said, I went a little nuts the other day and ordered a mini motherload. Some pretty tiny wood veneer embellishments, crochet hearts, papers, stamps, ink, washi tape, and the like.


One of my favorite ways to organize and display my smaller supplies is in vintage chip and dip servers. And most have a lazy susan which is convenient and fun.

Ohhh and we hung some party lights in the studio! You know those outdoor globe style lights that always make an evening in the backyard a bit more charming? I LOVE the feel! Happy to work into the night under their festive glow.



And we got a few of my fave candles from Anthropologie...deeelish scents plus a warm flicker bring a lil magic to studio time.
